Cooktop Cove: Seriously, this is our version of a boujee breakfast!
By Holly Owens
Sometimes, you just need a breakfast that's a little indulgent, and that's where my Strawberry Cream Stuffed French Toast comes in! The inspiration for this dish actually came from a brunch date I had with an old friend, where we basked in nostalgic stories and sipped on lattes for hours. It's the perfect combination of fluffy toast, sweet strawberries, and creamy goodness that feels like a warm hug on a Sunday morning. Whether you're prepping this for a family brunch or a special treat for yourself, this recipe will definitely start your day on a sweet note.
Strawberry Cream Stuffed French Toast pairs wonderfully with crispy bacon or sausage links for a savory contrast. If you're leaning towards a lighter side, a fresh fruit salad can complement the richness of the dish. And don't forget a cup of freshly brewed coffee or a refreshing mimosa to elevate your brunch experience!
Strawberry Cream Stuffed French Toast
Servings: 4 servings
Ingredients
8 slices of thick-cut bread (preferably brioche or challah)
4 ounces of cream cheese, softened
1 cup of sliced fresh strawberries
2 tablespoons of powdered sugar
4 large eggs
1/2 cup of milk
1 teaspoon of vanilla extract
1/2 teaspoon of ground cinnamon
Butter for frying
Maple syrup (optional)
Directions
1. In a small bowl, mix the softened cream cheese and powdered sugar until smooth.
2. Gently fold in the sliced strawberries into the cream cheese mixture.
3. Spread a generous layer of the strawberry cream mixture onto four slices of bread, then top each with the remaining four slices to create sandwiches.
4. In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon.
5. Heat a large skillet over medium heat and melt a bit of butter.
6. Dip each sandwich into the egg mixture, making sure to coat both sides well.
7. Fry the sandwiches in the skillet until golden brown on both sides, about 3-4 minutes per side.
8. Serve warm, with a drizzle of maple syrup if desired.
Variations & Tips
For a twist, you can swap out strawberries for blueberries or raspberries. If you're a fan of nutty flavors, try adding a spread of Nutella to the mix. For a healthier version, use whole-grain bread and a low-fat cream cheese alternative. And if you need to save time in the morning, prep the strawberry cream filling the night before and just assemble and cook the sandwiches when you're ready to eat!
