Low Carb Stuffed Crust Pizza using Tortillas

Ingredients
4 large low-carb tortillas
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese
1/2 cup tomato sauce or pizza sauce
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes (optional)
1 cup sliced pepperoni or any favorite toppings
Fresh basil leaves for garnish
Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place two tortillas on the baking sheet and top each with 1/4 cup of mozzarella cheese, spreading it evenly over the tortillas.
Cover each cheese-topped tortilla with another tortilla, pressing down lightly to help them stick together.
Spread 1/4 cup of tomato sauce over the top of each tortilla stack.
In a small bowl, mix the ricotta cheese with oregano, garlic powder, and crushed red pepper flakes (if using) until well combined.
Dollop spoonfuls of the seasoned ricotta mixture on top of the sauce, then spread evenly with the back of a spoon.
Sprinkle the remaining mozzarella cheese over the ricotta layer, then add the sliced pepperoni or chosen toppings.
Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are crispy and golden.
Remove the pizzas from the oven and let them cool for a few minutes before slicing into wedges.
Garnish with fresh basil leaves before serving.
