Slow Cooker Taco Dip
Servings: 8
Ingredients
1 lb ground beef
1 small onion, finely chopped
1 packet taco seasoning mix (1 oz)
8 oz cream cheese, softened
1 cup sour cream
1 cup salsa
1 can diced tomatoes with green chilies (10 oz), drained
2 cups shredded Mexican cheese blend
1 can black beans (15 oz), rinsed and drained
1 can corn (15 oz), drained
1 jalapeño, finely chopped (optional)
Fresh cilantro, chopped (for garnish)
Directions
In a skillet over medium-high heat, cook the ground beef and chopped onion until the beef is browned and the onion is translucent. Drain any excess fat.
Stir in the taco seasoning mix and cook for another minute, ensuring the beef is well coated with the seasoning.
Transfer the beef mixture to your slow cooker. Add the cream cheese, sour cream, salsa, diced tomatoes with green chilies, shredded cheese, black beans, and corn.
Stir everything together until well combined.
Cover and cook on low for 2-3 hours or until the cheese is fully melted and the dip is hot and bubbly.
If using, stir in the chopped jalapeño for an extra kick of heat.
Before serving, sprinkle with fresh cilantro for a burst of color and flavor.
Serve warm with your choice of sides.
Variations & Tips
For a lighter version, substitute ground turkey or chicken for the beef. You can also use Greek yogurt in place of sour cream for a slightly tangier profile.
