These fried pineapple rings are delicious on their own, but you can also serve them with a side of vanilla ice cream for an extra special treat. Fried Pineapple Rings with Dipping Sauce

Ingredients
1 fresh pineapple, peeled, cored, and sliced into rings
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
Pinch of salt
1 cup sparkling water (or club soda)
Vegetable oil, for frying
1 cup sweetened condensed milk (for dipping sauce)
2 tbsp lime juice (for dipping sauce)
Directions
1. First, prepare your pineapple by peeling and coring it, then slicing it into 1/2-inch thick rings. Set aside.
2. In a large bowl, whisk together the flour, cornstarch, baking powder, and salt.
3. Gradually add the sparkling water while whisking until the batter is smooth and slightly thick.
4. Heat about 2 inches of vegetable oil in a deep skillet or frying pan over medium-high heat until it reaches 350°F (175°C).
5. Dip each pineapple ring into the batter, making sure it is fully coated.
6. Carefully place the battered pineapple rings into the hot oil, a few at a time, and fry until golden brown, about 2-3 minutes per side.
7. Remove the fried pineapple rings from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
8. For the dipping sauce, mix the sweetened condensed milk and lime juice in a small bowl until well combined.
9. Serve the warm fried pineapple rings with the dipping sauce on the side and enjoy!
Variations & Tips
For a healthier version, you can bake the pineapple rings instead of frying. Simply preheat your oven to 400°F (200°C), place the battered rings on a parchment-lined baking sheet, and bake for 15-20 minutes, flipping halfway through. You can also try a cinnamon sugar coating instead of the dipping sauce by lightly dusting the fried rings with a mixture of cinnamon and sugar right after frying. For a gluten-free option, substitute the all-purpose flour with gluten-free flour.
