Cool Whipped Strawberry Frosting
Servings: 12
Ingredients
1 cup fresh strawberries, hulled and chopped
1/4 cup granulated sugar
2 tablespoons water
1 teaspoon lemon juice
1 cup heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
Directions
1. In a small saucepan, combine strawberries, granulated sugar, water, and lemon juice.
2. Cook over medium heat, stirring frequently, until the strawberries break down and the mixture thickens into a syrup, about 10 minutes.
3. Strain the strawberry mixture through a fine-mesh sieve into a bowl, discarding the solids. Allow the syrup to cool completely.
4. In a large mixing bowl, beat the heavy whipping cream until soft peaks form.
5. Gradually add the powdered sugar and continue to beat until stiff peaks form.
6. Gently fold the cooled strawberry syrup into the whipped cream until well combined.
7. Stir in the vanilla extract until evenly distributed.
8. Chill the frosting in the refrigerator for at least 30 minutes before using to allow it to set.
Variations & Tips
For a more intense strawberry flavor, you can add a few drops of strawberry extract or even a tablespoon of strawberry jam to the mixture. If fresh strawberries aren't in season, frozen strawberries can be used, but make sure they are well-drained before cooking. For a tangier twist, consider folding in a bit of softened cream cheese for a strawberry-cream cheese frosting.
