Cooktop Cove: What a clever idea! Wish I thought of this myself!
By Georgia Lynn
Years ago, I remember sitting on the old farmhouse porch, listening to the crickets chirp as we shelled peas and swapped stories about our day. This recipe for Baked Sausage Stuffed Jalapeno Bites brings me back to those times. It’s a warm, comforting dish that combines the robust flavors of spicy jalapenos and savory sausage, a duo that's simply irresistible. Perfect for family gatherings or casual get-togethers, these tasty bites celebrate the hearty, straightforward cooking that’s dear to us here in the Midwest.
These jalapeno bites are a versatile appetizer that pairs wonderfully with a variety of sides. Crisp celery sticks and a cool, creamy ranch dip make excellent companions, balancing the heat of the jalapenos. A refreshing cucumber salad or some tangy pickled vegetables can also complement the richness of the sausage filling. For a more substantial spread, consider serving them alongside grilled corn on the cob or a hearty potato salad.
Baked Sausage Stuffed Jalapeno Bites
Servings: 24 bites
Ingredients
12 large jalapenos, halved lengthwise and seeded
1 pound ground sausage
8 ounces cream cheese, softened
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Directions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Brown the ground sausage in a skillet over medium heat, breaking it apart as it cooks. Drain off any excess fat and let it cool slightly.
In a large mixing bowl, combine the cooked sausage, cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
Fill each halved jalapeno with the sausage and cheese mixture, pressing it in firmly.
Arrange the stuffed jalapenos on the prepared baking sheet, cut side up. Bake in the preheated oven for 20-25 minutes, or until the jalapenos are tender and the filling is golden and bubbly.
Allow the bites to cool slightly before serving.
Variations & Tips
For a milder version, try using baby bell peppers instead of jalapenos. You can also experiment with the filling by adding in chopped green onions or a bit of crumbled bacon for extra flavor. If you prefer a bit of a crunch, sprinkle some breadcrumbs on top before baking. And don’t forget to taste your filling before stuffing the peppers to adjust the seasonings to your liking.
