With the apple orchards nearby, we had an abundance of fresh cider, and combining it with tender pork chops was a way to celebrate the harvest season. This recipe captures the essence of those times, blending the sweet and savory into a meal that's perfect for a cozy family dinner. Apple Cider Pork Chops
Servings: 4 servings
Ingredients
4 bone-in pork chops, about 1-inch thick
1 cup apple cider
1/2 cup chicken broth
1/4 cup apple cider vinegar
1 tablespoon olive oil
1 medium onion, thinly sliced
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
1 apple, thinly sliced (optional)
Directions
1. Season the pork chops with salt and pepper on both sides.
2. In a large skillet, heat the olive oil over medium-high heat.
3. Add the pork chops to the skillet and brown them, about 3-4 minutes per side. Once browned, transfer them to a plate and set aside.
4. In the same skillet, add the sliced onion and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute.
5. Pour in the apple cider, chicken broth, and apple cider vinegar, stirring to combine. Scrape up any browned bits from the bottom of the skillet for added flavor.
6. Return the pork chops to the skillet, nestling them into the onion mixture. Sprinkle the dried thyme over the top.
7. If using, add the apple slices around the pork chops.
8. Reduce the heat to low, cover, and simmer for about 20-25 minutes, until the pork chops are cooked through and tender.
9. Taste the sauce and adjust the seasoning with salt and pepper, if needed.
10. Serve the pork chops with the sauce spooned over the top.
Variations & Tips
For a touch of sweetness, add a tablespoon of brown sugar or honey to the sauce. You can also substitute pork loin or tenderloin for the pork chops if you prefer. For a heartier meal, try adding a few sliced carrots or potatoes into the skillet along with the onions.
