Cooktop Cove: Whenever I make this, my husband is over the moon and always wants seconds!
By Georgia Lynn
In the heart of our cherished Midwest, where the winds whisper secrets through golden fields, cooking becomes a tapestry of memory and taste. As a young girl, I watched my grandmother knead dough in her sunlit kitchen, the scent of baking bread mingling with the crisp country air. Now, with a nod to tradition and a touch of modern flair, I bring you these delightful low carb cheese buns. Perfect for those wanting to enjoy homemade comfort without the heaviness of carbs, these buns capture the spirit of a classic, beloved by all generations.
These cheese buns pair beautifully with a fresh garden salad, perhaps dotted with juicy cherry tomatoes and thinly sliced cucumbers. For heartier fare, partner them with a rich stew or a steaming bowl of tomato soup, ideal for those chilly Midwestern evenings. And don't forget a dollop of butter on the side, just like Grandma used to serve it.
Low Carb Cheese Buns
Servings: 6
Ingredients
1 1/2 cups almond flour
1 tablespoon baking powder
1/2 teaspoon salt
2 cups shredded mozzarella cheese
2 ounces cream cheese
2 large eggs
1/4 cup grated Parmesan cheese
Directions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a microwave-safe bowl, combine the mozzarella and cream cheese. Microwave on high for 1 minute, stir, then heat for another 30 seconds until completely melted.
3. In a separate bowl, mix together the almond flour, baking powder, and salt.
4. Add the melted cheese mixture to the dry ingredients and stir until it starts to combine.
5. Add the eggs and continue to mix, working it into a dough. You may need to knead it with your hands a bit to get it well combined.
6. Divide the dough into 6 equal parts and shape each into a round bun.
7. Place the buns onto the prepared baking sheet, leaving some space between them.
8. Bake for 15-18 minutes, until they are golden brown and firm to touch.
9. Once baked, let them cool slightly before serving.
Variations & Tips
For a bit of a kick, try adding a pinch of garlic powder or dried herbs like oregano to the dough. You can also experiment with different cheeses for a varied flavor profile; cheddar or Gouda would lend a different but equally delicious taste. Remember, if you're accommodating specific dietary needs, ensure your baking powder is gluten-free.
