Cooktop Cove: We call this one 'Rancher’s Dream,' because it’s the most requested comfort dish after a long, cold day.
By McKayla Davis
There's nothing quite like the comforting aroma of slow-cooked potatoes wafting through your home. This slow cooker bacon ranch potatoes recipe is a beloved staple in our small Midwestern town, perfect for family gatherings or a cozy weeknight meal. With the creamy blend of ranch flavor, crispy bacon, and tender potatoes, it disappears fast whenever it's served. It's a dish that brings people together, making it a lovely centerpiece for any occasion.
This savory dish pairs perfectly with a fresh green salad or a bright, tangy coleslaw to balance the richness of the potatoes. You might also consider serving it alongside a simply grilled chicken breast or a juicy steak for a heartier meal. For those cooler evenings, a warm side of steamed broccoli or roasted vegetables can complement the flavors wonderfully.
Slow Cooker Bacon Ranch Potatoes
Servings: 6
Ingredients
3 pounds baby red potatoes, quartered
1 tablespoon olive oil
1 packet (1 ounce) dry ranch seasoning mix
1/2 teaspoon garlic powder
8 slices bacon, cooked and crumbled
1 1/2 cups shredded cheddar cheese
1/4 cup chopped fresh chives or green onions
Directions
Lightly grease the inside of your slow cooker with cooking spray or a little olive oil.
In a large bowl, toss the quartered potatoes with olive oil, ranch seasoning, and garlic powder until evenly coated.
Place half of the seasoned potatoes into the prepared slow cooker.
Sprinkle half of the cooked bacon and 3/4 cup of cheddar cheese over the potatoes.
Add remaining potatoes, bacon, and cheddar cheese, layering them in the same order.
Cover and cook on low heat for 6-7 hours, or until potatoes are tender.
Just before serving, sprinkle the top with fresh chives or green onions for a burst of color and flavor.
Variations & Tips
For a lighter version, you can swap some of the cheese with low-fat alternatives or just reduce the amount of cheese and bacon used. If you're serving this to kids or anyone who might be a little picky, consider using Yukon gold or russet potatoes instead of red for a change in texture. Vegetarians can skip the bacon and add thinly sliced mushrooms or bell peppers for an earthy take on the dish. For a spicy kick, add crushed red pepper or a dash of hot sauce to the seasoning mix.
