Poor Man’s Tater Tot Casserole
Servings: 6
Ingredients
1 pound ground beef
1 small onion, chopped
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
1 cup shredded cheddar cheese
1 package (32 oz) frozen tater tots
Salt and pepper to taste
Directions
1. Preheat your oven to 350°F (175°C).
2. In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is tender. Drain off any excess fat.
3. In a large bowl, combine the cream of mushroom soup and milk. Add salt and pepper to taste.
4. Stir the cooked beef and onion mixture into the soup mixture until well combined.
5. Spread the beef mixture evenly in a 9x13-inch baking dish.
6. Sprinkle the shredded cheddar cheese over the beef mixture.
7. Arrange the tater tots in a single layer on top of the cheese.
8. Bake in the preheated oven for 45-50 minutes, or until the tater tots are golden brown and crispy.
9. Let it cool slightly before serving.
Variations & Tips
For a bit of extra flavor, you can add a packet of taco seasoning to the beef for a Mexican twist. If you have picky eaters who aren't fans of mushrooms, substitute the cream of mushroom soup with cream of chicken or cream of celery. You can also sneak in some vegetables like peas, corn, or carrots into the beef mixture for added nutrition. For a cheesy delight, sprinkle more cheddar or try mixing in some mozzarella.
