Cooktop Cove: 'Shepherd's Delight'—a simple five-ingredient classic that everyone digs into happily every time.
By Holly Owens
Shepherd’s Pie is one of those warm, comforting dishes that reminds me of cozy dinners with my family during the chilly Midwest winters. The origins of this dish trace back to the UK, but it has found its way into the hearts and kitchens across the world. The beauty of Shepherd’s Pie lies in its simplicity and the hearty satisfaction it brings, perfect for those busy weeknights when you crave something homey without the fuss. This version requires only five ingredients, making it an ideal go-to recipe for when you want a no-stress dinner that still feels special.
This Shepherd’s Pie pairs beautifully with a simple green salad or some steamed green beans for a pop of color and added nutrition. You can also serve it with crusty bread to soak up any delicious gravy, turning the meal into a full-on comfort feast.
5-Ingredient Shepherd’s Pie
Servings: 4
Ingredients
1 pound ground beef or lamb
1 medium onion, chopped
1 cup frozen mixed vegetables
2 cups mashed potatoes (use store-bought or homemade)
1 cup beef gravy
Directions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef (or lamb) and chopped onion until the meat is browned and the onion is translucent. Drain any excess fat.
Stir in the frozen mixed vegetables and beef gravy, and cook for another 2-3 minutes until everything is heated through.
Transfer the meat and vegetable mixture to an ovenproof dish, spreading it out evenly.
Top with an even layer of mashed potatoes, using a spatula to spread them over the meat mixture. If you like, create a texture on the potatoes using the back of a fork.
Bake in the preheated oven for about 25 minutes, or until the top is lightly golden and the edges are bubbling.
Let cool for a few minutes before serving.
Variations & Tips
For a vegetarian version, substitute the meat with cooked lentils or a meat substitute like ground Beyond Meat. You can also add some shredded cheese to the mashed potatoes for a cheesy crust. If you prefer, swap the onion for leek for a slightly different flavor profile. For an extra kick, add a pinch of smoked paprika or a splash of Worcestershire sauce to the meat mixture.
