By McKayla Davis
This comforting Amish breakfast casserole is a hearty and filling dish that's perfect for a lazy weekend morning or for hosting a cozy family brunch. The recipe combines all the breakfast favorites like eggs, hash browns, and sausage into one delicious slow-cooked casserole. It's inspired by the simplicity and wholesomeness associated with Amish cooking, making it an ideal way to start the day with love and warmth.
To complement this hearty breakfast casserole, consider serving it with a fresh fruit salad to add some brightness and color to your plate. A side of buttery toast or warm biscuits also pairs nicely, offering a crispy counterpoint to the creamy and cheesy casserole. If you’re hosting a gathering, set out a variety of jams and preserves to allow your guests to add a touch of sweetness to their meal.

1 bag (30 oz) of frozen shredded hash brown potatoes
1 medium onion, finely chopped
2 cups of shredded cheddar cheese
12 large eggs
1 cup of milk
1 teaspoon of salt
1/2 teaspoon of black pepper
1/4 teaspoon of garlic powder

3. In another bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
4. Lightly coat a slow cooker with cooking spray. Layer the hash brown mixture in the bottom of the slow cooker.
5. Pour the egg mixture over the top of the hash brown mixture, ensuring it's evenly distributed.
6. Cover and cook on low for 5-6 hours or until the eggs are set and the casserole is cooked through.
7. Once done, let it cool slightly before serving.
Variations & Tips
For picky eaters, you can easily adjust this recipe. Swap the breakfast sausage for bacon or ham if preferred. Add some chopped bell peppers or mushrooms for extra flavor and nutrients. If you're looking to make it lighter, use turkey sausage and low-fat cheese. You can even make it vegetarian by omitting the meat entirely and adding more veggies like spinach or zucchini.
