Beef Stroganoff is a classic comfort dish with roots in Russian cuisine, known for its creamy sauce and tender beef. It's a favorite in our home, especially on chilly evenings when we crave something warm and hearty. This slow cooker version is perfect for busy families, as it allows you to set it and forget it, letting the flavors meld together beautifully throughout the day. It's a dish that brings everyone to the table with its inviting aroma and rich taste.
Beef Stroganoff pairs wonderfully with a side of buttered egg noodles, which soak up the creamy sauce perfectly. You can also serve it over mashed potatoes or rice for a comforting meal. Slow Cooker Beef Stroganoff Supreme
Servings: 6
Ingredients
2 pounds beef stew meat, cut into 1-inch cubes
1 onion, chopped
2 cloves garlic, minced
8 ounces mushrooms, sliced
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 cup sour cream
2 tablespoons all-purpose flour
Cooked egg noodles or rice, for serving
Fresh parsley, chopped, for garnish
Directions
Place the beef stew meat, onion, garlic, and mushrooms in the slow cooker.
In a small bowl, mix together the beef broth, Worcestershire sauce, salt, pepper, and paprika. Pour over the beef and vegetables in the slow cooker.
Cover and cook on low for 7-8 hours, or until the beef is tender.
About 30 minutes before serving, in a small bowl, combine the sour cream and flour. Stir this mixture into the slow cooker, mixing well to combine with the beef and sauce.
Cover and cook on high for an additional 30 minutes, or until the sauce has thickened.
Serve the beef stroganoff over cooked egg noodles or rice, and garnish with fresh parsley.
Variations & Tips
For a lighter version, you can substitute Greek yogurt for the sour cream. If you have picky eaters who aren't fans of mushrooms, feel free to leave them out or replace them with another vegetable like bell peppers. For an extra touch of flavor, add a splash of white wine to the sauce before cooking. If you prefer a thicker sauce, you can add an extra tablespoon of flour or cornstarch mixed with water.
