Low Carb Cauliflower Mash
Servings: 4
Ingredients
1 large head of cauliflower, cut into florets
2 tablespoons unsalted butter
1/4 cup heavy cream
2 cloves garlic, minced
Salt and pepper to taste
2 tablespoons grated Parmesan cheese (optional)
Chopped fresh chives for garnish (optional)
Directions
1. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook until tender, about 10-12 minutes.
2. Drain the cauliflower and let it sit in the colander for a few minutes to remove excess moisture.
3. In a large bowl, combine the cooked cauliflower, butter, heavy cream, and minced garlic.
4. Using an immersion blender or a food processor, blend the mixture until smooth and creamy.
5. Season with salt and pepper to taste. Stir in the Parmesan cheese if using.
