Cooktop Cove: We’ve dubbed this one 'Cranberry Bliss', and it's a festive favorite that has everyone asking for seconds!
By Georgia Lynn
There's something truly comforting about a slow-cooked meal, especially when it brings back memories of family gatherings and festive occasions. This cranberry pork roast is a dish that has graced our family table for generations, particularly during the cooler months when the harvest is in and the air turns crisp. The sweet-tart cranberries meld beautifully with the savory pork, creating a harmony of flavors that feels both nostalgic and timeless. It's a dish that invites you to slow down, savor the moment, and share a meal with loved ones.
This cranberry pork roast pairs wonderfully with classic Midwestern sides like creamy mashed potatoes or buttery corn on the cob. A simple green salad with a tangy vinaigrette can balance the richness of the pork, while a side of warm, crusty bread is perfect for soaking up the delicious juices. For a touch of sweetness, consider serving it with a side of roasted sweet potatoes or a cranberry relish.
Slow Cooker Cranberry Pork Roast
Servings: 6
Ingredients
1 (3-4 pound) boneless pork loin roast
1 (16-ounce) can whole berry cranberry sauce
1/2 cup sugar
1/2 cup cranberry juice
1 tablespoon Dijon mustard
1 tablespoon soy sauce
1/4 teaspoon ground black pepper
1/4 teaspoon ground cloves
Directions
Place the pork roast in the slow cooker.
In a medium bowl, combine the cranberry sauce, sugar, cranberry juice, Dijon mustard, soy sauce, black pepper, and cloves. Mix well.
Pour the cranberry mixture over the pork roast, ensuring it is well coated.
Cover the slow cooker and cook on low for 6-8 hours, or until the pork is tender and easily pulls apart with a fork.
Once cooked, remove the pork from the slow cooker and let it rest for a few minutes before slicing.
Serve the pork slices with the cranberry sauce from the slow cooker drizzled on top.
Variations & Tips
For a bit of extra flavor, you can add a chopped onion or a few cloves of garlic to the slow cooker along with the pork. If you prefer a spicier dish, consider adding a pinch of red pepper flakes to the cranberry mixture. For a more robust flavor, substitute apple cider vinegar for the cranberry juice. If you have leftovers, this pork roast makes a delightful sandwich filling the next day, especially when paired with a slice of sharp cheddar cheese.
