Cheesy Amish Beef Casserole

Ingredients
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 ounces) tomato sauce
1 can (14.5 ounces) diced tomatoes, undrained
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
8 ounces egg noodles
1 cup sour cream
1 cup cottage cheese
2 cups shredded cheddar cheese
Directions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender. Drain any excess fat.
Stir in the tomato sauce, diced tomatoes, oregano, basil, salt, and pepper. Let the mixture simmer for about 10 minutes.
Meanwhile, cook the egg noodles according to package instructions until al dente. Drain and set aside.
In a medium bowl, combine the sour cream and cottage cheese. Mix well.
Layer half of the cooked noodles in a 9x13 inch baking dish. Spread the sour cream and cottage cheese mixture over the noodles.
Top with half of the beef mixture, then sprinkle with half of the shredded cheddar cheese.
Repeat the layers with the remaining noodles, beef mixture, and cheddar cheese.
Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Let the casserole rest for a few minutes before serving.
