These cheddar and chive biscuits are a delightful twist on a classic, perfect for anyone looking to cut back on carbs without sacrificing taste. I first whipped these up on a chilly Sunday afternoon when I was craving something warm and savory but wanted to stay true to my low-carb lifestyle. They're quick to make and even quicker to disappear!
These biscuits are incredibly versatile and can be served alongside a hearty soup or stew for a comforting meal. They also pair beautifully with a fresh salad for a light lunch or can be enjoyed on their own as a savory snack. For breakfast, try them with a dollop of butter and a slice of smoked salmon or a poached egg on top.
Low Carb Cheddar and Chive Biscuits
Servings: 8
Ingredients
1 cup almond flour
1/4 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 cup unsalted butter, melted
2 large eggs
1 cup shredded cheddar cheese
2 tablespoons chopped fresh chives
Directions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, and salt.
In a separate bowl, beat the eggs and then stir in the melted butter.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in the shredded cheddar cheese and chopped chives.
Scoop the dough onto the prepared baking sheet, forming 8 biscuits.
Bake for 15-18 minutes, or until the biscuits are golden brown and firm to the touch.
Allow to cool slightly before serving.
