Amish Sweet Potato and Marshmallow Casserole

Ingredients
4 large sweet potatoes
1/2 cup brown sugar
1/4 cup melted butter
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup mini marshmallows
Directions
Preheat your oven to 350°F (175°C).
Peel and cube the sweet potatoes, then boil them in a large pot of water until tender, about 20 minutes.
Drain the sweet potatoes and mash them in a large bowl until smooth.
Stir in the brown sugar, melted butter, cinnamon, nutmeg, salt, and vanilla extract until well combined.
Transfer the sweet potato mixture into a greased 9x13-inch baking dish, spreading it evenly.
Sprinkle the mini marshmallows evenly over the top of the sweet potato mixture.
Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.
Let it cool slightly before serving, allowing the marshmallows to set a bit.
