Slow Cooker Amish Shoofly Pie
Servings: 8
Ingredients
1 1/2 cups all-purpose flour
1/2 cup brown sugar
1/4 cup unsalted butter, softened
1 cup molasses
3/4 cup hot water
1 teaspoon baking soda
1 unbaked pie crust
Directions
1. In a medium bowl, combine the flour and brown sugar. Cut in the butter until the mixture resembles coarse crumbs.
2. In another bowl, mix the molasses, hot water, and baking soda until well combined.
3. Line your slow cooker with parchment paper and fit the unbaked pie crust into the bottom.
4. Pour the molasses mixture into the pie crust.
5. Sprinkle the crumb mixture evenly over the top of the molasses filling.
6. Cover the slow cooker and cook on low for 2 to 3 hours, or until the filling is set and the top is golden.
7. Once done, carefully remove the pie using the parchment paper and let it cool before serving.
Variations & Tips
For a deeper flavor, try using blackstrap molasses. You can also add a pinch of cinnamon or nutmeg to the crumb topping for a warm spice note. If you prefer a less sweet pie, reduce the molasses to 3/4 cup and increase the hot water to 1 cup. For a nutty twist, sprinkle some chopped pecans or walnuts over the crumb topping before cooking.
