Slow Cooker V8 Chili
Servings: 6-8 servings
Ingredients
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
2 cups V8 vegetable juice
2 tablespoons chili powder
1 teaspoon cumin
Salt and pepper to taste
Directions
In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
Add the chopped onion, garlic, and green bell pepper to the skillet and sauté until the vegetables are tender.
Transfer the beef and vegetable mixture to the slow cooker.
Add the kidney beans, black beans, diced tomatoes, V8 juice, chili powder, cumin, salt, and pepper to the slow cooker.
Stir everything together until well combined.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Taste and adjust seasoning if necessary before serving.
Variations & Tips
For a spicier version, add a diced jalapeño or a pinch of cayenne pepper. You can also substitute ground turkey or chicken for a leaner option. If you have picky eaters, consider blending the V8 juice with the diced tomatoes to create a smoother base. For a vegetarian version, omit the meat and add extra beans or vegetables like zucchini or corn.
