Orange Slice Cake

Ingredients
1 cup butter, softened
2 cups granulated sugar
4 large eggs
3 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 pound orange slice candies, chopped
1 cup chopped pecans
1 cup sweetened shredded coconut
1 teaspoon vanilla extract
1 teaspoon orange extract
Directions
Preheat your oven to 325°F (165°C). Grease and flour a bundt pan.
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
In another bowl, sift together the flour, baking soda, and salt.
Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.
Fold in the chopped orange slice candies, pecans, coconut, vanilla extract, and orange extract.
Pour the batter into the prepared bundt pan and smooth the top with a spatula.
Bake for 1 1/2 to 2 hours, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool in the pan for 15 minutes before turning it out onto a wire rack to cool completely.
Variations & Tips
For a nut-free version, simply omit the pecans. If you're catering to coconut lovers, consider adding an extra half cup of shredded coconut for more texture. You can also substitute lemon extract for the orange extract for a different citrus twist. For those who prefer a less sweet cake, reduce the amount of orange slice candies by half. To make it more festive, add a glaze made from powdered sugar and orange juice drizzled over the top.
