Four Onion Dip

Ingredients
2 tablespoons olive oil
1 large yellow onion, thinly sliced
1 large red onion, thinly sliced
4 green onions, chopped
2 shallots, thinly sliced
1 cup sour cream
1 cup cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh chives, chopped (optional)
Directions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat the olive oil over medium heat. Add the yellow and red onions, and shallots. Cook, stirring occasionally, until the onions are caramelized, about 20 minutes.
3. Add the green onions to the skillet and cook for an additional 5 minutes. Remove from heat and let cool slightly.
4. In a large mixing bowl, combine the sour cream, cream cheese, cheddar cheese, Parmesan cheese, garlic powder, salt, and pepper.
5. Stir in the caramelized onion mixture until well combined.
6. Transfer the mixture to a baking dish and spread evenly.
7. Bake in the preheated oven for 20-25 minutes, or until the dip is bubbly and golden on top.
8. Remove from the oven and let cool slightly before serving. Garnish with fresh chives if desired.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce to the mixture before baking. You can also experiment with different cheeses, such as Gruyère or mozzarella, for a unique flavor profile. If you're short on time, use pre-caramelized onions from the store, though the flavor won't be as rich. For a lighter version, substitute Greek yogurt for sour cream and use reduced-fat cream cheese.
