Low Carb Crispy Egg Foo Young
Servings: 4
Ingredients
4 large eggs
1 cup bean sprouts
1/2 cup cooked chicken, shredded
1/4 cup green onions, chopped
1/4 cup mushrooms, sliced
1 tablespoon soy sauce
1 teaspoon sesame oil
Salt and pepper to taste
2 tablespoons olive oil for frying
Directions
In a large mixing bowl, whisk the eggs until well beaten.
Add the bean sprouts, cooked chicken, green onions, mushrooms, soy sauce, sesame oil, salt, and pepper to the eggs. Mix until all ingredients are well combined.
Heat the olive oil in a large non-stick skillet over medium-high heat.
Spoon about 1/4 cup of the egg mixture into the skillet, spreading it out slightly to form a patty.
Cook for 3-4 minutes on each side, or until golden brown and crispy.
Repeat with the remaining egg mixture, adding more oil to the skillet if necessary.
Serve hot with your choice of sides.

For a vegetarian version, omit the chicken and add more vegetables like bell peppers or zucchini. You can also experiment with different proteins such as shrimp or pork.
