Cooktop Cove: I grew up eating this and it still hits the spot today!
By Holly Owens
Fried Cabbage with Bacon, Onion, and Garlic is one of those comforting dishes that reminds me of Sunday dinners at my grandma's house. It's a simple, hearty dish that brings together the smoky flavor of bacon with the sweetness of caramelized onions and the earthy taste of cabbage. This dish is perfect for those busy weeknights when you want something quick, delicious, and satisfying. Plus, it's a great way to sneak in some veggies without feeling like you're eating a salad!
This dish pairs beautifully with a side of mashed potatoes or a warm slice of crusty bread to soak up all the delicious juices. If you're looking for a lighter option, serve it alongside a simple green salad. For a complete meal, you could add a grilled chicken breast or a piece of fish.
Fried Cabbage with Bacon, Onion, and Garlic
Servings: 4
Ingredients
6 slices of bacon, chopped
1 large onion, thinly sliced
3 cloves garlic, minced
1 medium head of cabbage, cored and sliced
Salt and pepper to taste
1 tablespoon apple cider vinegar (optional)
Directions
1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
2. Add the sliced onion to the skillet and cook until it becomes soft and translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute until fragrant.
4. Add the sliced cabbage to the skillet, stirring to coat it in the bacon grease. Cook, stirring occasionally, until the cabbage is tender and slightly caramelized, about 10-15 minutes.
5. Season with salt and pepper to taste. If using, stir in the apple cider vinegar for a bit of tang.
6. Return the cooked bacon to the skillet, stir to combine, and serve hot.
Variations & Tips
For a vegetarian version, you can omit the bacon and use olive oil or butter instead. Adding a pinch of smoked paprika can give it a smoky flavor without the meat. If you like a bit of heat, try adding a pinch of red pepper flakes. You can also toss in some sliced bell peppers or carrots for extra color and nutrition. For a heartier dish, consider adding cooked sausage or kielbasa.
