Slow Cooker Funeral Potatoes
Servings: 8
Ingredients
1 (30 oz) package frozen shredded hash brown potatoes
1 (10.5 oz) can condensed cream of chicken soup
2 cups sour cream
2 cups shredded cheddar cheese
1/2 cup melted butter
1/2 cup chopped onion
1 teaspoon garlic powder
Salt and pepper to taste
2 cups crushed cornflakes
1/4 cup melted butter (for topping)
Directions
Spray the inside of your slow cooker with non-stick cooking spray.
In a large bowl, combine the cream of chicken soup, sour cream, cheddar cheese, melted butter, chopped onion, garlic powder, salt, and pepper.
Fold in the frozen hash brown potatoes until well combined.
Transfer the mixture to the slow cooker and spread it evenly.
Cover and cook on low for 4-5 hours or until the potatoes are tender and the cheese is bubbly.
About 30 minutes before serving, mix the crushed cornflakes with 1/4 cup of melted butter and sprinkle over the top of the potatoes.
Cover and continue cooking for the remaining time to let the topping crisp up.
Serve hot and enjoy!
Variations & Tips
For a different flavor, try using cream of mushroom or cream of celery soup instead of cream of chicken. You can also add cooked bacon bits or diced ham for extra protein. If you have picky eaters, consider using a milder cheese like Monterey Jack. For a bit of a kick, add some diced green chilies or a dash of hot sauce to the mixture. You can also substitute crushed Ritz crackers or panko breadcrumbs for the cornflake topping if you prefer.
