Reuben lasagna bake is a delightful twist on the classic Reuben sandwich, combining all the savory flavors of corned beef, sauerkraut, and Swiss cheese into a comforting, layered casserole. This dish is perfect for those who love the hearty taste of a Reuben but want to serve it up in a family-friendly, shareable format. It's a great way to bring a bit of deli-inspired goodness to your dinner table, and it's sure to be a hit with both kids and adults alike.
This Reuben lasagna bake pairs wonderfully with a crisp green salad or some roasted vegetables to balance out the richness of the dish. Reuben Lasagna Bake
Servings: 6
Ingredients
9 lasagna noodles
1 pound sliced corned beef
2 cups sauerkraut, drained
2 cups shredded Swiss cheese
1 cup Thousand Island dressing
1/2 cup grated Parmesan cheese
1 tablespoon caraway seeds (optional)
Salt and pepper to taste
Directions
Preheat your oven to 375°F (190°C).
Cook the lasagna noodles according to the package instructions. Drain and set aside.
In a 9x13 inch baking dish, spread a thin layer of Thousand Island dressing on the bottom.
Place three lasagna noodles on top of the dressing.
Layer with half of the corned beef, half of the sauerkraut, and one-third of the Swiss cheese.
Drizzle with more Thousand Island dressing and sprinkle with a bit of salt, pepper, and caraway seeds if using.
Repeat the layers with the remaining ingredients, finishing with a layer of noodles topped with the remaining Swiss cheese and Parmesan cheese.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Let the lasagna rest for 10 minutes before slicing and serving.
Variations & Tips
For a lighter version, you can use turkey or chicken instead of corned beef. If you have picky eaters who aren't fans of sauerkraut, try using cooked cabbage or spinach as a milder alternative. For a gluten-free option, use gluten-free lasagna noodles. You can also add a layer of sautéed onions or mushrooms for extra flavor.
