Cooktop Cove: Yes yes yes! This has been my lunch for the last few weeks because it's so good!

Low Carb Cheesy Garlic Chicken Wraps are a delightful fusion of flavor and convenience, perfect for those looking to enjoy a satisfying meal without the extra carbs. This dish draws inspiration from Mediterranean and American cuisines, combining the savory taste of garlic with the creamy richness of cheese. It's an excellent choice for anyone following a low-carb diet or simply seeking a lighter meal option. The wraps are quick to prepare, making them ideal for busy weeknights or a casual lunch.
These wraps pair wonderfully with a fresh green salad, perhaps with a lemon vinaigrette to complement the garlic and cheese. For a heartier meal, consider serving them alongside roasted vegetables or a bowl of creamy tomato soup. A side of pickled vegetables can also add a nice tangy contrast to the richness of the wraps.
Low Carb Cheesy Garlic Chicken Wraps
Servings: 4
Ingredients
1 pound chicken strips
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
1 cup shredded mozzarella cheese
4 low-carb tortillas
1/4 cup fresh parsley, chopped
Directions
Heat olive oil in a large skillet over medium heat.
Add minced garlic and sauté for about 1 minute until fragrant.
Add chicken strips to the skillet, season with oregano, salt, and pepper, and cook until the chicken is browned and cooked through, about 6-8 minutes.
Reduce the heat to low and sprinkle the mozzarella cheese over the chicken. Cover the skillet and let the cheese melt, about 2-3 minutes.
Warm the low-carb tortillas in a separate pan or microwave.
Place a portion of the cheesy garlic chicken onto each tortilla.
Sprinkle with fresh parsley, wrap tightly, and serve immediately.
Variations & Tips
For a spicier version, add a pinch of red pepper flakes when cooking the garlic. You can also substitute the mozzarella with cheddar or pepper jack cheese for a different flavor profile. If you prefer a vegetarian option, replace the chicken with sautéed mushrooms or zucchini. For added texture, consider adding sliced avocado or a handful of spinach to the wraps before serving.
