There's something incredibly comforting about coming home to the smell of a warm, hearty meal that's been simmering away all day. This Slow Cooker Smothered Chicken Fillets recipe is one of my go-to dishes when I know I'll have a busy day ahead. It's inspired by the rich, savory flavors of Southern cooking, where smothered chicken is a staple. The slow cooker does all the hard work, leaving you with tender, juicy chicken that's perfect for a cozy family dinner or a meal prep for the week.
This dish pairs beautifully with fluffy mashed potatoes or a side of steamed rice to soak up all that delicious gravy. For a bit of color and crunch, serve it alongside some steamed green beans or a fresh garden salad. If you're feeling indulgent, a slice of warm cornbread on the side can really complete the meal.
Slow Cooker Smothered Chicken Fillets
Servings: 4
Ingredients
4 boneless, skinless chicken fillets
1 tablespoon olive oil
1 onion, thinly sliced
2 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons cornstarch
2 tablespoons water
Chopped fresh parsley for garnish (optional)
Directions
Heat the olive oil in a skillet over medium heat. Season the chicken fillets with salt, pepper, thyme, and paprika.
Brown the chicken fillets in the skillet for about 3-4 minutes on each side until golden. Transfer them to the slow cooker.
In the same skillet, add the sliced onion and garlic. Sauté until the onion is translucent, about 3 minutes.
Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
Pour the onion and broth mixture over the chicken in the slow cooker.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
About 30 minutes before serving, mix the cornstarch and water in a small bowl to make a slurry. Stir it into the slow cooker to thicken the sauce.
Once the sauce has thickened, taste and adjust seasoning if necessary. Garnish with chopped parsley before serving, if desired.
Variations & Tips
For a lighter version, you can substitute the heavy cream with half-and-half or a non-dairy alternative like coconut milk. If you like a bit of heat, add a pinch of cayenne pepper or some red pepper flakes to the seasoning. You can also add sliced mushrooms or bell peppers to the slow cooker for extra flavor and nutrition. For a gluten-free option, ensure your chicken broth is gluten-free and use a gluten-free thickener instead of cornstarch if needed.
