There's something truly comforting about a classic meatloaf, especially when it's infused with the rich flavors of Lipton Onion Soup mix. This recipe takes me back to Sunday dinners at my grandmother's farmhouse, where the aroma of a hearty meal would fill the air. The addition of mashed potatoes as a stuffing makes this dish a delightful twist on a Midwestern staple, perfect for family gatherings or a cozy night in.
This meatloaf pairs beautifully with a side of steamed green beans or buttered corn, bringing a touch of color and freshness to your plate. A crisp garden salad with a tangy vinaigrette can also complement the rich flavors of the meatloaf, while a slice of warm, crusty bread is perfect for soaking up any extra juices.
Baked Lipton Onion Soup Meatloaf with Mashed Potatoes Stuffing
Servings: 6
Ingredients
2 pounds ground beef
1 packet Lipton Onion Soup mix
1 cup breadcrumbs
2 eggs
1/2 cup ketchup
1/4 cup milk
2 cups prepared mashed potatoes
1 tablespoon Worcestershire sauce
Salt and pepper to taste
Directions
Preheat your oven to 350°F (175°C).
In a large bowl, combine the ground beef, Lipton Onion Soup mix, breadcrumbs, eggs, ketchup, milk, Worcestershire sauce, salt, and pepper. Mix until well combined.
On a piece of parchment paper or foil, flatten the meat mixture into a rectangle about 1/2 inch thick.
Spread the prepared mashed potatoes evenly over the meat mixture, leaving a small border around the edges.
Carefully roll the meatloaf, starting from one of the shorter sides, using the parchment paper or foil to help guide it.
Place the rolled meatloaf seam-side down in a baking dish.
Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and the top is browned.
Let the meatloaf rest for a few minutes before slicing and serving.
Variations & Tips
For a cheesy twist, add a layer of shredded cheddar cheese on top of the mashed potatoes before rolling the meatloaf. You can also use ground turkey or a mix of beef and pork for a different flavor profile. If you prefer a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the meat mixture. For a gluten-free version, substitute the breadcrumbs with gluten-free breadcrumbs or crushed gluten-free crackers.
