6 medium potatoes, peeled and cubed
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup milk

Salt and pepper to taste
1/2 cup cooked bacon, crumbled

In a large mixing bowl, combine the sour cream, cheddar cheese, milk, melted butter, garlic powder, salt, and pepper.
Add the cooked potatoes to the mixture and gently stir until the potatoes are well coated.
Transfer the potato mixture into a greased 9x13 inch baking dish.
Sprinkle the crumbled bacon and chopped green onions evenly over the top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Allow to cool slightly before serving.
Variations & Tips
For a lighter version, you can use Greek yogurt instead of sour cream and turkey bacon instead of regular bacon. If you have picky eaters, consider adding some hidden veggies like finely chopped broccoli or cauliflower into the mix. For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños. You can also experiment with different cheeses, such as Monterey Jack or pepper jack, for a different flavor profile.
