This Pineapple Cake is a delightful treat that brings a taste of the tropics to our cozy Midwestern kitchens. It's a recipe passed down from my grandmother, who loved making it for family gatherings. The cake is incredibly easy to make, requiring just a few pantry staples and a can of crushed pineapple. It's perfect for those days when you want to whip up something sweet without much fuss. The moist, fruity cake is sure to become a family favorite, bringing smiles to both young and old.
This Pineapple Cake pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream. For a more tropical flair, you can serve it with a side of fresh fruit salad. It also makes a lovely addition to a brunch spread, alongside savory dishes like quiche or a breakfast casserole.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Variations & Tips
For a nutty twist, you can add 1/2 cup of chopped walnuts or pecans to the batter. If you prefer a bit of spice, try adding a teaspoon of cinnamon or nutmeg. For those who love coconut, sprinkle some shredded coconut on top of the batter before baking. This cake can also be made gluten-free by substituting the all-purpose flour with a gluten-free flour blend. If you're catering to picky eaters, you can frost the cake with cream cheese frosting or a simple glaze made from powdered sugar and pineapple juice.
