By Holly Owens
Baked Cheesy Squash Slices are a delightful way to enjoy the bounty of squash, especially during the late summer and early fall when it's in season. This recipe is perfect for those busy weeknights when you want something quick yet satisfying. The combination of tender squash and crispy, golden parmesan cheese is simply irresistible. Plus, it's a great way to sneak some veggies into your meal without feeling like you're eating a salad.
These Baked Cheesy Squash Slices pair wonderfully with a simple grilled chicken breast or a juicy steak. For a vegetarian option, serve them alongside a hearty quinoa salad or a bowl of creamy tomato soup. They also make a great appetizer for a casual gathering, especially when served with a tangy dipping sauce.

1/4 teaspoon black pepper
1 cup grated parmesan cheese

Variations & Tips
For a bit of a kick, try adding a pinch of red pepper flakes to the parmesan cheese before sprinkling it on the squash. You can also experiment with different cheeses like mozzarella or cheddar for a different flavor profile. If you're looking to add some herbs, a sprinkle of dried oregano or thyme can complement the dish nicely. For a more substantial meal, serve the slices over a bed of cooked pasta and drizzle with olive oil.
