No-Bake Coconut Pecan Praline Cookies with Dark Chocolate Drizzle
Servings: 24 cookies
Ingredients
1 cup granulated sugar
1 cup brown sugar
1/2 cup evaporated milk
1/4 cup corn syrup
1/2 cup butter
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups shredded coconut
2 cups chopped pecans
1/2 cup dark chocolate chips, melted
Directions
In a saucepan, combine granulated sugar, brown sugar, evaporated milk, corn syrup, and butter.
Heat over medium heat, stirring until fully blended.
Bring the mixture to a boil and let it boil for 3 minutes.
Remove from heat and stir in vanilla extract and salt.
Gradually add shredded coconut and pecans, stirring until well mixed and slightly thickened.
Using a tablespoon or scoop, portion the mixture onto wax paper-lined baking sheets.
Let the cookies cool and solidify at room temperature or in the freezer.
Once solidified, drizzle melted dark chocolate over the cookies.
Allow the chocolate to set before serving.
