This cobbler pairs beautifully with a dollop of whipped cream or a scoop of low-carb vanilla ice cream. Keto Strawberry Cream Cheese Cobbler

Ingredients
1 cup almond flour
1/4 cup coconut flour
1/2 cup granulated erythritol
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, melted
2 large eggs
1 tsp vanilla extract
1/2 cup cream cheese, softened
2 cups fresh strawberries, hulled and sliced
1 tbsp lemon juice
1/4 cup granulated erythritol (for strawberries)
Directions
Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish.
In a large bowl, mix together the almond flour, coconut flour, 1/2 cup erythritol, baking powder, and salt.
Add the melted butter, eggs, and vanilla extract to the dry ingredients and stir until well combined.
In a separate bowl, beat the cream cheese until smooth and set aside.
In another bowl, combine the sliced strawberries, lemon juice, and 1/4 cup erythritol. Toss to coat the strawberries evenly.
Spread half of the batter into the prepared baking dish. Layer the cream cheese over the batter, followed by the strawberry mixture.
Drop the remaining batter over the strawberries in small spoonfuls.
Bake for 30-35 minutes or until the top is golden brown and the strawberries are bubbly.
Allow the cobbler to cool for a few minutes before serving.
Variations & Tips
For a different flavor, try using blueberries or raspberries instead of strawberries. If you're not strictly keto, you can substitute the erythritol with regular sugar. Adding a pinch of cinnamon to the batter can give it a warm, spiced flavor. For a nut-free version, replace the almond flour with sunflower seed flour. This cobbler can also be made ahead of time and stored in the fridge for up to three days, making it a convenient option for meal prep.
