Mini spinach and cheese quiches are a delightful low-carb option for breakfast or brunch that fit perfectly into a busy lifestyle. These little bites of goodness are inspired by the classic quiche, but without the crust, making them lighter and perfect for those watching their carb intake. I love making these on a Sunday afternoon, so I have a quick and nutritious breakfast ready to go for the week. They're also a hit at brunch gatherings or as a savory snack.
These mini quiches pair beautifully with a fresh green salad or a side of roasted vegetables for a complete meal. If you're serving them for brunch, consider adding a fruit salad or a platter of sliced avocados and tomatoes. For a heartier option, serve them alongside some crispy bacon or smoked salmon.
Low Carb Mini Spinach and Cheese Quiches
Servings: 12 mini quiches
Ingredients
1 tablespoon olive oil
1/2 cup chopped onion
2 cups fresh spinach, chopped
6 large eggs
1/2 cup heavy cream
1 cup shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon nutmeg
Directions
Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.
In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and set aside.
In a large bowl, whisk together the eggs, heavy cream, salt, pepper, garlic powder, and nutmeg until well combined.
Stir in the shredded cheddar cheese and the cooked spinach and onion mixture.
Divide the mixture evenly among the prepared muffin cups.
Bake in the preheated oven for 20-25 minutes, or until the quiches are set and the tops are golden brown.
Allow to cool slightly before removing from the muffin tin. Serve warm or at room temperature.
Variations & Tips
For a different flavor profile, try adding crumbled feta cheese and sun-dried tomatoes instead of cheddar. You can also mix in some cooked bacon or sausage for added protein. If you prefer a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce to the egg mixture. These quiches are versatile and can be customized with your favorite herbs and spices.
