These lemon rosemary chicken fillets pair wonderfully with a variety of sides. Consider serving them with a fresh Greek salad, featuring cucumbers, tomatoes, olives, and feta cheese, for a refreshing contrast. For a heartier meal, you might add a side of roasted vegetables or a warm quinoa salad. If you're in the mood for something light, a simple side of steamed asparagus or green beans will complement the flavors beautifully. Mediterranean Lemon Rosemary Chicken Fillets
Servings: 4
Ingredients
4 boneless, skinless chicken fillets
2 tablespoons olive oil
Juice of 1 lemon
1 tablespoon lemon zest
2 teaspoons fresh rosemary, chopped
2 cloves garlic, minced
Salt and pepper to taste
Lemon wedges for garnish
Fresh rosemary sprigs for garnish
Directions
1. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, chopped rosemary, minced garlic, salt, and pepper.
2. Place the chicken fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is well coated. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
3. Preheat your grill or a large skillet over medium-high heat.
4. Remove the chicken from the marinade and place it on the grill or skillet. Cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through.
5. Transfer the chicken to a serving plate and let it rest for a few minutes.
6. Garnish with lemon wedges and fresh rosemary sprigs before serving.
Variations & Tips
For a different twist, try adding a teaspoon of honey to the marinade for a touch of sweetness. You can also substitute thyme for rosemary if you prefer a different herb flavor. If you like a bit of heat, add a pinch of red pepper flakes to the marinade. For a more robust flavor, consider grilling the chicken on a charcoal grill to add a smoky taste. If you're short on time, you can use dried rosemary instead of fresh, but reduce the amount to 1 teaspoon as dried herbs are more concentrated.
