This slow cooker cheesy chicken casserole is a comforting dish that's perfect for busy weeknights or cozy family dinners. Originating from the heart of American home cooking, this recipe combines tender chicken with a rich, cheesy topping, making it a hit with both kids and adults. It's a great way to bring everyone to the table, and the slow cooker does most of the work, leaving you more time to spend with your loved ones.
This cheesy chicken casserole pairs beautifully with a side of steamed broccoli or green beans to add some freshness and color to your plate. You might also consider serving it with a simple side salad or some crusty bread to soak up the delicious cheesy sauce. For a heartier meal, mashed potatoes or rice would complement the casserole nicely.
Slow Cooker Cheesy Chicken Casserole
Servings: 6
Ingredients
4 boneless, skinless chicken breasts
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup chopped fresh parsley
Directions
Place the chicken breasts in the bottom of the slow cooker.
In a bowl, mix together the cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper.
Pour the mixture over the chicken breasts, ensuring they are well covered.
Set the slow cooker to low and cook for 6-7 hours, or until the chicken is tender and cooked through.
About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top of the chicken.
Cover and continue cooking until the cheese is melted and bubbly.
Garnish with chopped parsley before serving.
Variations & Tips
For a little extra flavor, you can add a teaspoon of smoked paprika or a pinch of cayenne pepper to the soup mixture. If you have picky eaters, consider using a mild cheese like mozzarella instead of cheddar. You can also add vegetables like sliced mushrooms or bell peppers to the slow cooker for a more complete meal. For a gluten-free version, make sure to use a gluten-free cream of chicken soup.
