This oven-baked jalapeño cheese egg casserole is a delightful dish that brings a touch of spice to your breakfast or brunch table. Originating from the heart of comfort food, this casserole combines the creamy richness of eggs with the zesty kick of jalapeños and the gooey goodness of melted cheese. It's perfect for those lazy weekend mornings when you want something hearty and satisfying. Plus, it's a great way to use up any leftover veggies or cheese you might have in the fridge. Whether you're feeding a crowd or just your family, this dish is sure to be a hit.
This casserole pairs wonderfully with a fresh green salad or some roasted potatoes on the side. For a lighter option, serve it with a fruit salad or a bowl of mixed berries. If you're hosting a brunch, consider adding some crispy bacon or sausage links to the table. A warm, crusty bread or some buttery biscuits would also complement the flavors nicely, allowing everyone to mop up every last bit of cheesy goodness.

In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Stir in the shredded cheddar cheese, diced jalapeños, and chopped green onions.
Pour the egg mixture into the prepared baking dish, spreading it out evenly.
Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden brown.
Allow the casserole to cool slightly before slicing and serving.
Variations & Tips
For a milder version, use bell peppers instead of jalapeños. You can also add cooked bacon or sausage for extra protein. If you have picky eaters, consider adding some diced tomatoes or spinach for added nutrition. For a gluten-free option, make sure all your ingredients are certified gluten-free. Feel free to experiment with different types of cheese, such as Monterey Jack or pepper jack, for a different flavor profile.
