Low Carb Crispy Sweet Potato Fritters
Servings: 4
Ingredients
2 medium sweet potatoes, peeled and grated
2 large eggs
1/4 cup almond flour
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Olive oil for frying
Directions
1. In a large bowl, combine the grated sweet potatoes, eggs, almond flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
2. Mix well until all ingredients are thoroughly combined.
3. Heat a generous amount of olive oil in a large skillet over medium-high heat.
4. Drop spoonfuls of the sweet potato mixture into the hot oil, flattening them slightly with the back of the spoon.
5. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
6. Remove the fritters from the skillet and drain on paper towels.
7. Garnish with fresh parsley before serving.
