Slow Cooker Classic Beef Meatloaf with Tomato Glaze

Ingredients
2 pounds ground beef
1 cup breadcrumbs
1/2 cup milk
2 large eggs
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
2 sprigs fresh parsley for garnish
Directions
In a large bowl, combine the ground beef, breadcrumbs, milk, eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix until just combined.
Shape the mixture into an oval loaf and place it in a foil-lined slow cooker.
In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar to create the tomato glaze.
Pour half of the glaze over the meatloaf, spreading it evenly.
Cover and cook on low for 6-8 hours, or until the meatloaf reaches an internal temperature of 160°F.
About 30 minutes before the meatloaf is done, pour the remaining glaze over the top.
Once cooked, carefully remove the meatloaf from the slow cooker using the foil. Let it rest for a few minutes before slicing.
Garnish with fresh parsley sprigs before serving.
Variations & Tips
For a different flavor profile, try using ground turkey or a mixture of beef and pork. You can also add grated carrots or bell peppers to the meat mixture for added nutrition and texture.
