Slow cooker baked beans and sausage is a comforting dish that brings back memories of family gatherings and potlucks. It's a hearty meal that's perfect for those busy weekdays when you want something delicious waiting for you at home. The slow cooker does all the work, allowing the flavors to meld together beautifully. This dish combines the savory goodness of sausages with the rich, sweet, and tangy flavors of baked beans. It's a Midwest favorite that warms the soul and fills the kitchen with an irresistible aroma.
This dish pairs wonderfully with a side of cornbread or a simple green salad to balance the richness of the beans and sausage. You might also consider serving it with some steamed vegetables or a light coleslaw to add a bit of crunch and freshness. For a more filling meal, serve it over a bed of rice or alongside some roasted potatoes.

1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1 small onion, chopped

2. In the slow cooker, combine the baked beans, barbecue sauce, brown sugar, Dijon mustard, Worcestershire sauce, chopped onion, and garlic powder.
3. Stir in the browned sausage slices.
4. Cover and cook on low for 4-6 hours or until the flavors are well blended and the sauce is thickened to your liking.
5. Taste and season with salt and pepper as needed.
6. Before serving, sprinkle with chopped parsley for a pop of color and freshness.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce. You can also use different types of sausages, like spicy Italian or chorizo, to change up the flavor profile. If you prefer a vegetarian version, omit the sausage and add more beans or some smoked tofu for a similar texture. For a sweeter dish, increase the brown sugar or add a tablespoon of molasses.
