Cooktop Cove: Just found a new method for cooking sausages, and it's completely transformative!
By Holly Owens
Oven baked grilled sausages with peppers and onions is a delightful dish that brings together the hearty flavors of juicy sausages and the sweet, caramelized goodness of roasted vegetables. This dish is a staple in many Midwest homes, especially during the cooler months when comfort food is a must. It's perfect for those busy weeknights when you want something satisfying yet simple to prepare. The beauty of this dish lies in its versatility and ease, making it a go-to for both family dinners and casual gatherings with friends.
This dish pairs wonderfully with a side of creamy mashed potatoes or a fresh green salad to balance out the richness of the sausages. For a more hearty meal, consider serving it with a side of crusty bread to soak up the delicious juices. If you're in the mood for something lighter, a simple quinoa or couscous salad with a lemon vinaigrette would complement the flavors beautifully.
Oven Baked Grilled Sausages with Peppers and Onions
Servings: 4
Ingredients
4 pork sausages (such as bratwurst)
2 large onions, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon garlic powder
Directions
Preheat your oven to 400°F (200°C).
Line a large baking tray with aluminum foil for easy cleanup.
In a large bowl, combine the sliced onions and bell peppers. Drizzle with olive oil, then sprinkle with salt, black pepper, oregano, and garlic powder. Toss until the vegetables are well coated.
Spread the vegetable mixture evenly on the prepared baking tray.
Place the sausages on top of the vegetables, arranging them parallel to each other.
Bake in the preheated oven for 25-30 minutes, or until the sausages are cooked through and the vegetables are tender and caramelized.
For an extra charred finish, turn on the broiler for the last 3-5 minutes of cooking, keeping a close eye to prevent burning.
Remove from the oven and let it rest for a few minutes before serving.
Variations & Tips
For a spicier kick, try using hot Italian sausages or add a pinch of red pepper flakes to the vegetable mix. If you prefer a more herbal flavor, fresh rosemary or thyme can be added to the vegetables before baking. For a lower-carb option, substitute the sausages with chicken or turkey sausages. You can also add other vegetables like zucchini or mushrooms for more variety and nutrition.
