Savory Bread Pudding with Sausage and Herbs

Ingredients
8 cups of cubed day-old bread
1 pound of Italian sausage, casing removed
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, chopped
1/4 cup fresh parsley, chopped
6 large eggs
2 cups whole milk
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
Directions
Preheat your oven to 350°F (175°C) and lightly grease a rectangular baking pan.
In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it up into small pieces with a wooden spoon. Remove the sausage from the skillet and set aside.
In the same skillet, add the onion and garlic, cooking until the onion is translucent and fragrant. Stir in the thyme, rosemary, and parsley, cooking for an additional minute.
In a large bowl, whisk together the eggs, milk, cream, and half of the Parmesan cheese. Season with salt and pepper.
Add the cubed bread to the egg mixture, stirring until the bread is well coated. Let it sit for about 10 minutes to absorb the liquid.
Gently fold in the cooked sausage and onion mixture.
Pour the mixture into the prepared baking pan, spreading it evenly. Sprinkle the remaining Parmesan cheese over the top.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the pudding is set.
Allow the bread pudding to cool for a few minutes before serving.

For a vegetarian version, omit the sausage and add sautéed mushrooms or roasted vegetables like bell peppers and zucchini.
