Cooktop Cove: I could munch on this treat endlessly!
By Holly Owens
As someone who's always on the go, finding time to cook can be a challenge. But I've discovered that making a low carb pepperoni flatbread pizza is not only quick but also incredibly satisfying. This dish is perfect for those who are watching their carb intake but still crave the comforting taste of pizza. The origins of flatbread pizza can be traced back to ancient times, where people would bake flatbreads with toppings over open fires. Today, it's a versatile dish that can be customized to fit any dietary preference. This version is especially great for busy weeknights when you want something delicious without the guilt.
This low carb pepperoni flatbread pizza pairs wonderfully with a fresh green salad. Consider a simple arugula salad with lemon vinaigrette to complement the rich flavors of the pizza. If you're looking to add a bit more substance, roasted vegetables like zucchini or bell peppers make a great side. For a refreshing drink, a sparkling water with a splash of lime is a perfect match.

Arrange the pepperoni slices in rows over the cheese.
Sprinkle dried oregano over the top.
Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
Remove from the oven and let cool for a few minutes before slicing and serving.
Variations & Tips
For a veggie twist, add sliced mushrooms, bell peppers, or olives before baking. If you're not a fan of pepperoni, try using cooked chicken or turkey sausage as a topping. For a spicier kick, sprinkle some red pepper flakes over the top before baking. You can also experiment with different cheeses like cheddar or provolone for a unique flavor profile. If you're making this for a crowd, consider preparing multiple flatbreads with different toppings to cater to everyone's taste.
