Italian Meatballs with Hard-Boiled Eggs
Servings: 4-6 servings
Ingredients
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup chopped fresh parsley
1 large egg
Salt and pepper to taste
4 hard-boiled eggs, peeled
2 cups tomato sauce
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Directions
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, raw egg, salt, and pepper. Mix until well combined.
Form the mixture into meatballs, about 1.5 inches in diameter.
Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
Remove the meatballs from the skillet and set aside.
In the same skillet, add the tomato sauce, oregano, and red pepper flakes. Stir to combine and bring to a simmer.
Gently add the meatballs back into the skillet, nestling them into the sauce.
Cut the hard-boiled eggs in half and place them among the meatballs in the sauce.
Cover the skillet and let the dish simmer for 15-20 minutes, allowing the flavors to meld together.
Serve hot, garnished with additional parsley if desired.
Variations & Tips
For a spicier version, increase the amount of red pepper flakes or add a pinch of cayenne pepper to the meatball mixture.
