Chicken and cheese turnovers are a delightful fusion of savory flavors and flaky pastry, perfect for those seeking a low-carb alternative to traditional turnovers. Originating from the idea of combining the comforting elements of chicken and cheese within a pastry shell, this dish is ideal for anyone looking to enjoy a satisfying meal without the extra carbs. The turnovers are not only delicious but also versatile, making them a great option for lunch, dinner, or even a hearty snack.
These low-carb savory chicken and cheese turnovers pair wonderfully with a fresh green salad, perhaps with a lemon vinaigrette to complement the richness of the filling. For a more substantial meal, consider serving them alongside roasted vegetables or a light soup, such as a tomato basil or a creamy mushroom soup. The turnovers also make a great addition to a brunch spread, accompanied by a selection of cheeses and cured meats.
Low Carb Savory Chicken and Cheese Turnovers
Servings: 4
Ingredients
1 cup cooked chicken, diced
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 package low-carb pastry dough (such as almond flour-based)
1 egg, beaten (for egg wash)
Directions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the diced chicken, mozzarella cheese, Parmesan cheese, parsley, basil, garlic powder, salt, and pepper. Mix until well combined.
Roll out the low-carb pastry dough on a lightly floured surface to about 1/8-inch thickness.
Cut the dough into 6-inch squares.
Place a generous spoonful of the chicken and cheese mixture onto the center of each square.
Fold the dough over the filling to form a triangle, and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.
Brush the tops of the turnovers with the beaten egg to ensure a golden-brown finish.
Place the turnovers on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes, or until the turnovers are golden brown and the filling is hot and bubbly.
Allow to cool slightly before serving.
Variations & Tips
For a different flavor profile, try adding some sautéed mushrooms or spinach to the filling. You can also experiment with different cheeses, such as cheddar or feta, for a unique twist. To add a bit of heat, consider incorporating a pinch of red pepper flakes or a dash of hot sauce into the filling. If you're looking for a gluten-free option, ensure the pastry dough is made from gluten-free ingredients.
