Cooktop Cove: How to make homemade coconut mound bars
By Henry Cannon
Welcome to Nicko's Kitchen, where the recipes are outrageously delicious and the ingredients are completely affordable. Nicko has over one million subscribers on YouTube and more than 160 million video views. It's clear that people are fans of his recipes - which range from breakfast and brunch to dessert and cocktails.
If you're a fan of coconut and have been looking for a sweet treat to try out at home, you've come to the right place. Nicko's Almond Joy replicas are sure to satisfy any sweet tooth. All you need for this recipe is chocolate, butter, sugar, cream, and coconut.
For starters, melt down the butter, sugar, and cream.
Add in the coconut and mix until the contents of the bowl begin to clump.
Once you have the desired texture, press the coconut mixture into a baking dish. Flatten it out with the back of your mixing spoon so it is as even as possible. Then, stick the dish in the refrigerator overnight.
In the morning (or after you've let it sit for several hours), grab the solidified coconut mixture and cut it into little bars. Nicko recommends cutting it into thirds, but this will depend on if you want bite-size snacks or full candy bars.
Once that's done, melt down your chocolate and coat your coconut bars. Place them on a baking sheet and stick them in the fridge for a half hour or so.
You can also melt down some dark chocolate (or white) and drizzle that over the bars. Enjoy!
