Fruitcakes tend to get a lot of flak around the holidays (largely because the store-bought kind are less than stellar), but the truth is they can be quite delectable. Take, for instance, the dump cake, which is just a mix of cake batter and your choice of fruit filling.
The treat is aptly named, as you essentially just dump your ingredients into a baking tray before it goes into the oven. If all this talk about fruitcake has piqued your interest and your sweet tooth aching, then you ought to try whipping up a dump cake at home.
Cherry-pineapple dump cake
Preparation Time: 5 minutes
Total Time: 1 hour, 5 minutes
1 (15-oz) can crushed pineapple with juice, undrained
1 (20-oz) can cherry pie filling
1 box yellow cake mix
1 cup chopped pecans or walnuts
1 stick butter
1. Grease a 9x13 casserole dish and preheat the oven to 350° F.
2. Layer your cake: Spread pineapple with juices on the bottom of the casserole dish.
Then pour cherry pie filling on top.
Sprinkle cake mix over the top of the fruit.
It's okay if you don't get it perfectly even, though you should avoid any large mounds.
Lay sliced butter on top of the cake mix, evenly distributed.
Top with chopped nuts.
3. Bake in the oven for 45 minutes to 1 hour, or until the top is golden brown and bubbly. Let cool for 10-15 minutes before serving with vanilla ice cream.
