Cooktop Cove: How to make a taco casserole
By Henry Cannon
Fans of Mexican food will have a great appreciation for this casserole. It's a fairly simple recipe that is sure to yield a hit amongst your friends or family. The recipe comes courtesy of the One Pot Chef, who specializes in creating meals that don't put a dent in your wallet nor do they require you to be in the kitchen for hours on end.
The below recipe is for a taco casserole. To start, the One Pot Chef sautés onions and ground beef in a saucepan.
Next he adds in a can of diced tomatoes, a can of kidney beans, taco seasoning, and a can of cream chicken soup. Now stir! It's worth noting that you can improvise with the taco seasoning and your choice of soup.
Next, get out your casserole dish and add a layer of crushed tortilla chips. Then pour in your ground beef mixture.
Add another layer of crushed tortilla chips and top it off with some cheese. Then repeat the process. Bake the casserole until the cheese starts to bubble.
After letting it cool for a few minutes, top it off with sour cream and salsa if you so choose. Enjoy!
