Cooktop Cove: Recipe puts a deceivingly delicious, healthy spin on tater tots

Fried potatoes are, for many people, irresistible in all their forms -- French fries, chips, hash browns, and of course, tater tots. Unfortunately, they really aren't that healthy at all because of the frying process, which zaps most of the nutritional value from these delectable tubers. So instead of using potatoes and frying them, Becky Tarala, Blogger at The Two Bite Club, makes her tots by baking a broccoli mixture instead. 
If you love having tater tots with weekend breakfasts or have a child that loves them but you aren't so happy about the poor nutritional content, this recipe will be absolutely perfect for you. 
The ingredients you'll need for this recipe are listed below: 
-1 bunch of broccoli, cut into equal sized florets (around 3-4 cups)
-1 cup sharp cheddar cheese, shredded (Becky used Cabot Vermont Sharp White Cheddar)
-1/3 cup onion, finely chopped
-1/2 cup breadcrumbs
-2 eggs
-salt and pepper

Breadcrumbs and cheese in the tot mixture give these little tots a robust, satisfying flavor. 
If you've got a picky eater on your hands, adding a small amount of cooked, chopped bacon to the mixture would make these tots seem super decadent while masking the taste of the broccoli -- After all, what parent hasn't had to get creative in hiding the taste of "green things" at one point or another? 
When they're done, they'll be a gorgeous green and golden brown color; aren't they so enticing?
